RECIPE | Salty Chocolate Chip and Hazelnut Cookies


    

 Sometimes you just need a chocolate chip cookie and that sometimes for me was last weekend when it was rainy and cold and I had nowhere to be. Not too much to say about these gems - they were delicious, a perfect amount of chewiness and that this recipe is one that always pulls through with the goods. I used a block of chocolate with hazelnuts through it to add an extra crunch but you could just use nuts if you would rather - figured I'd go the easy way!

Salty chocolate chip and hazelnut cookies

2 1/4 cups all-purpose flour
1 tsp baking soda
1 tsp salt
1 cup chopped butter, at room temperature
3/4 cup white sugar
3/4 cup brown sugar
1 tsp vanilla extract
2 eggs, at room temperature 
1 block of chocolate with nuts, roughly chopped
1 tsp sea salt

Preheat oven to 175° C
In a bowl, mix together the flour, baking soda and regular salt
In a separate bowl, whisk together the butter and sugars until light and creamy
Add in the vanilla and then eggs one at a time and beat thoroughly
Fold in the chocolate 
Using spoons, drop spoon size dobs of cookie dough onto a tray with baking paper and sprinkle the sea salt over them
Cook for 10 to 14 minutes or until starting to brown around the edges
Remove from oven and let cool for a few minutes before transferring to a wire cooling rack

NOTE: the dough freezes really well and cookie dough is always a good thing to be able to whip out!
